A crisp, refreshing vegetarian side inspired by traditional Italian “Sedano in Insalata,” ready in just 10 minutes and ideal as a light starter or side dish.
Ingredients (serves 2–3)
- 6 celery stalks
- 40 g Grana Padano (very thinly sliced)
- 40 g walnuts (coarsely crushed)
- A handful fresh parsley (chopped)
- Salt, to taste
- 2–3 tbsp extra virgin olive oil
Instructions
- Wash celery thoroughly and slice into thin rounds.
- Place in a bowl, then add Grana Padano, walnuts, and parsley.
- Season with salt and drizzle olive oil.
- Stir gently to combine.
- Let rest for about 10 minutes to allow flavors to meld.


Tips & Variations
- Add a splash of lemon juice for extra freshness.
- Swap Grana with Parmesan for a slightly sharper flavor.
- Best served fresh; store leftovers in an airtight container in the fridge for up to 1 day.
