Easy Celery Salad (Quick Mediterranean Side Dish)

A crisp, refreshing vegetarian side inspired by traditional Italian “Sedano in Insalata,” ready in just 10 minutes and ideal as a light starter or side dish.

Ingredients (serves 2–3)

  • 6 celery stalks
  • 40 g Grana Padano (very thinly sliced)
  • 40 g walnuts (coarsely crushed)
  • A handful fresh parsley (chopped)
  • Salt, to taste
  • 2–3 tbsp extra virgin olive oil

Instructions

  1. Wash celery thoroughly and slice into thin rounds.
  2. Place in a bowl, then add Grana Padano, walnuts, and parsley.
  3. Season with salt and drizzle olive oil.
  4. Stir gently to combine.
  5. Let rest for about 10 minutes to allow flavors to meld.

Tips & Variations

  • Add a splash of lemon juice for extra freshness.
  • Swap Grana with Parmesan for a slightly sharper flavor.
  • Best served fresh; store leftovers in an airtight container in the fridge for up to 1 day.
