Oven-Grilled Scallops with Garlic & Parsley Breadcrumbs | Mediterranean Recipe

These oven-grilled scallops with garlicky herby breadcrumbs are the kind of simple seafood dish that feels special without any fuss. A quick soak in dry white wine keeps them delicate, then a Mediterranean-style breadcrumb topping (garlic, parsley, olive oil) turns beautifully golden under the grill. Perfect as a starter, or as part of a relaxed coastal-style spread.

Ingredients (serves 2–4 as a starter)

  • Scallops (in the shell, or scallop meat), as needed
  • Dry white wine, as needed
  • Breadcrumbs, as needed
  • Garlic (1 small clove, or to taste)
  • Fresh parsley, finely chopped
  • Extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Rinse and dry: Gently rinse the scallops under running water, then pat them dry with kitchen paper.
  2. Soak briefly in wine: Place the scallops in a bowl, cover with the white wine, and leave to soak for about 30 minutes. Drain well.
  3. Arrange on a tray: Lay the scallops in a baking tray. If you’re using the shells, arrange them shell-side down; otherwise, line the tray with baking paper.
  4. Make the seasoned breadcrumbs: In a bowl, mix the breadcrumbs with finely chopped (or crushed) garlic, parsley, a pinch of salt, black pepper, and a drizzle of olive oil. You’re aiming for a slightly moist, sandy texture rather than dry crumbs.
  5. Top the scallops: Spoon the breadcrumb mixture over each scallop and finish with a little extra olive oil.
  6. Grill: Cook under a hot grill for about 8–10 minutes, until lightly crisp and golden on top. Serve straight away.

Tips & Variations

  • For extra crunch: Slightly coarse breadcrumbs give a nicer texture than very fine ones.
  • Lemon lift: Add a little lemon zest to the breadcrumbs for a fresher, brighter finish.
  • Watch the grill: Grills can vary a lot — keep an eye on them in the last couple of minutes so they don’t brown too quickly.
  • Same topping, different seafood: This breadcrumb mix also works beautifully with prawns or mussels.
